Monday just got a little better after scoffing down one of these delicious blueberry muffins! I have been eating a lot of blueberry muffins at work recently from Costa and having looked at the calorie levels with the guys at work I decided to bake some so called healthier ones with less sugar. Well that was the idea anyway until I decided to also add in some *Lindt chocolate on the bottom!!!!
I picked up this recipe online and instead of putting the full 250g caster sugar I decided to cut the sugar down and added 100g of caster sugar and just 50g of *canderel and see what its like.
Here is the recipe for 8:
110g butter250g plain flour
100g caster sugar
50g canderel
2 eggs
125ml milk
2 teaspoons baking powder
1/2 teaspoon salt
225g fresh blueberries or tinned blueberries
- Preheat oven to 180 C / Gas 4. Grease and flour a muffin tin or line with paper cases. Sieve flour, baking powder and salt together and set aside.
- Cream butter and sugar until light and fluffy. Add eggs and beat well. Add milk and flour mixture. Beat until combined. Stir in blueberries.
- Fill muffin tin 2/3 full. Bake at 180 C / Gas 4 for 25 to 30 minutes.
These came out very well even though they didn't raise as much as I would like but they were delicious and the sweetness was just right. I eaten one already and I will be taking the rest into work tomorrow!! I won't tell them I used canderel and see if anyone notices......hubby certainly didn't notice!
I love the idea of adding a chocolate to the bottom, so yum!

It makes them more tasty but fatty at the same time! Hopefully the low sugar helps a bit!
