Cooking dinner during the weekday is such a chore when you are both just simply knackered from work. When I get home soon as I plonk myself on the sofa I really struggle to get up! A while back I came across this delicious recipe from The Londoner and I have been making it at least every other week because it's so simple at the max 10 min prep time and it's absolutely delicious!
Here is what you will need:
1x Pack of chicken thighs with skin as you will want a crispy skin
1-2 Heads of garlic depending how much you want
Some green dried herbs or fresh herbs - you can put what ever you have in your cupboard
Salt & Pepper
Olive oil - I don't bother drizzling this because enough juice come out of the chicken from the baking
We tend to serve this with boiled rice or salad / mash but you can serve it with what ever you have lying around in your cupboard.
Wash your chicken and put it in a shallow dish and season with salt / pepper.
Cut up your lemon and scatter it around the chicken.
Rip the garlic apart keeping the skin on and scatter it over your chicken.
You can drizzle some olive oil if you wish but I always skip this part.
Sprinkle some herbs to add a bit of colour and a little bit more salt / pepper and it's ready to go in the oven at 180c middle tray for around 45 minutes.
When it's ready serve on a plate with your sides and squeeze the lemon all over the chicken and you can do the same with the garlic. The garlic is well roasted that it comes out like a puree, trust me this is the most delicious part when eaten with the chicken and lemon sauce. I always put 2 heads of garlic because 1 was never enough.
