WINTER COMFORT FOOD: Simple Sausage Celery Rice Casserole | Dauphinoise Baked Potato

Before I start I must warn you that this is probably not one of the most photogenic dishes however it is absolutely delicious and total comfort food for those cold nights and perfect for the weekday when cooking can become a bit of a chore. I always make enough so I have left overs to take to work for lunch or just have the same again with some fresh veg for dinner the next day.
 Dauphinoise Gratin - Serves 2-3

2 large organic potatoes peeled and chopped into slices

1 small pot of double or single cream
Sea salt and freshly ground black pepper
Cheese to crumble on top
2 cloves of fresh garlic

1. Heat up the double cream on super slow heat and throw in the chopped garlic.
2. Peel the potatoes and chop it all up thinly and layer the potato in a dish (like the photo above) once you have done first layer add some salt & pepper and continue with the second layer and repeat. 
3. Turn oven on at 180c
4. When the double cream starts to boil you can pour it over the tray of potatoes and finish off adding salt and pepper.
5. Put the tray in the oven for 50 minutes until golden brown - top tray of the oven.
Ingredients - Sausage Celery Bake (serves 3-4 Adults)
1 pack of 6 sausages any type will be fine however I would suggest to purchase the finest so you get the quality of meat.
3 celery stalks finely chopped
1 chicken stock around 500ml
2 cups of rice - any rice will be fine but we generally eat sushi rice so we used that instead
1 tin of creamy soup any flavour will be fine and we used the Heinz Mushroom
1 pinch of dried chilli flakes for a kick
1. Chop up the celery
2. Wash the rice 
3. Lightly fry the sausages to seal them then chop them up
4. Mix your chicken or veg stock in 500ml hot water
5. Throw it all in a casserole dish and mix it together then add in your tinned soup and chilli flakes
6. Once it's all mixed in cover with foil and put it in the oven at 180 degrees for around 50 minutes.
7. If the rice is not cooked you can mix in some water and put it back in for another 10-15 minutes.
